Sanitizing refers specifically to the process of reducing the number of harmful microorganisms on surfaces to safe levels. This is crucial in food service environments to prevent foodborne illnesses and ensure that food is safe for consumption. Sanitizing is typically achieved using specific chemical solutions or processes that kill or deactivate pathogens on equipment, utensils, and surfaces used in food preparation. The other options do not align with the definition of sanitizing. Cooking food thoroughly relates to cooking practices that ensure food is safe to eat by killing harmful pathogens through high temperatures. Washing with soap and water is important for cleanliness but does not guarantee the same level of pathogen reduction that sanitizing offers. Adding spices to food contributes to flavor but has no direct impact on microbial safety, thus not relevant to the process of sanitizing.
